The Craft of Oolong: Partial Oxidation Explained

Oolong occupies the vast middle ground between green and black tea — and that middle ground is enormous. No other tea category covers as much flavor territory, from grassy and floral to dark and roasted, all through a single variable: oxidation.

The Spectrum of Oxidation

While green tea is barely oxidized and black tea is fully oxidized, oolong sits anywhere from 10% to 80% oxidation, depending on style. Lighter oolongs like Tie Guan Yin retain a jade-green color and floral fragrance; darker oolongs like Da Hong Pao develop deep amber liquor and roasted, mineral notes.

Bruising and Resting

Oxidation level is controlled through a repeated process of bruising leaf edges (by tossing or shaking) and resting them, allowing oxidation to develop unevenly across the leaf — green in the center, reddish-brown at the edges. This partial, uneven oxidation is what gives oolong its layered complexity.

Shape Matters Too

Oolongs are also rolled into two main shapes: tightly curled balls (common in Taiwan and Anxi) or long twisted strips (common in Wuyi Mountain styles) — each affecting how the tea unfurls and releases flavor during steeping.
